Roasted Curry Cauliflower Bites (Gluten-Free and Vegan)

1 large head organic cauliflower |
1-1/2 tsp. chili powder |
1/2 tsp. curry powder |
1 tsp. ground allspice |
2 Tbsp. extra virgin olive oil |
juice of 1 large orange |
1 c. ground pistachios |
1 Tbsp. fennel seeds |
1/4 tsp. sea salt |
1/4 c. fresh oregano, finely chopped |
hummus, for serving |
Directions:
1. Preheat oven to 375°F. Line a baking pan with tin foil. Cut cauliflower into florets. Place into the baking pan.
2. In a small bowl, whisk together remaining ingredients. Drizzle over cauliflower. Roast for 25-30 min. or until golden brown. Place into the fridge overnight in a glass bowl, covered.
3. Enjoy at room temperature with hummus.
